As the caterer at Farnborough and other live event venues throughout the UK, we not only believe in providing great food to enhance the experience of your guests, but we hold the belief that we are accountable in providing sustainable catering solutions that minimise our impact on the environment and continually improve the quality of every dish.

Sourcing Local

At the end of every fork customers can find quality, seasonal produce handpicked by Amadeus’ dedicated chefs. At Amadeus we are passionate about home grown produce. Our chefs work closely with our suppliers to make sure our menus include fresh local produce where possible. We are always on the lookout for new products and pioneering innovations from SMEs to introduce into our menus and kitchens. Loving local means we can offer fresh seasonal ingredients while reducing our food miles and minimising our impact on the environment. Amadeus has been awarded the Sustainability Award from The Menu Innovation and

Development Awards for its work around local sourcing and developing menus with local provenance across venues.

Long before the war on waste started grabbing the headlines, we were committed to operating in a sustainable, environmentally friendly way at all times. We’re proud to say 100% of our disposable packaging spend is on sustainable products – be that recyclable, biodegradable or compostable.

As a business, we look to source the products which represent the best fit for the venues in our portfolio. Where we do use plastic, we will source responsible plastic products. For example, our bottled water at the Farnborough is supplied by Princes Gate – their water bottles are made from 100% rPET (guaranteed to be from UK, postconsumer recycled bottles). This means that the bottles we use are not only made from recycled materials but can also be recycled.

It is also widely recognised that PET plastic uses less energy and produces fewer greenhouse gas emissions during manufacture than any other alternative packaging solution e.g. glass, cans, tetra pak. In this way, PET plastic represents the best packaging solution for the environment when recycled correctly.

Our focus on animal welfare will mean that our menus meet all the key Quality Assurance standards and above.

Eggs - We only serve Lion Mark free range, whole eggs and are work only with suppliers who ensure this is replicated in all products containing egg..

Meat - We only source Red Tractor meat from Grade A British Retail Consortium approved suppliers in our commitment to British produce.

Fish - A close relationship with the Marine Conservation Society also guarantees that only

sustainably caught fish and seafood is served in our venues.

Poultry - We’ve signed up to the European Chicken Commitment which means chicken in our supply chain will meet an improved set of welfare standards.

Our chefs are continually innovating our menus to ensure we offer balanced and nutritious dishes that meet current trends. Over the past two years, Amadeus has doubled its vegan offering across all venues and is looking to collaborate with leaders in vegan food to make sure it is providing the best and most innovative options in the industry.

Great coffee quality is so important to us, this is why we have our own MADE blend of beans. While we can’t source our coffee locally, we have ensured that this specially selected coffee blend is Rainforest Alliance, protecting the environment and rights of the workers in it origin country - South America.

Responsible innovation has always been the Amadeus way. We are forever interrogating our menus to ensure salt, sugar and fat levels are kept in check. Our aim is to to improve the nutritional value of our dishes at every opportunity.

We have already halved the amount of sugar by selecting alternatives to the traditional fizzy drinks, while salt consumption has also been reduced by not providing it ‘as standard’ for some of our favourite dishes. We reduced salt volumes and sugar by 25% in 2021 and are always reviewing our menus to see where we can make nutritional improvements without impacting taste.

Became the first catering company in the events sector to partner with food waste pioneers Winnow, using AI technology to monitor our food waste. In 2023 FIECC saved 5719 meals from waste with the help of Winnow, saving 9.8t of C02.
